Crunchy veggies make for an oh-so-refreshing snack that is perfect on a hot summer day. For this recipe, leave out the carrots and use green bell peppers only to keep it low-carb. I would also add a couple tablespoons of olive oil or avocado oil to the mix to make it higher in fat.
