Kulfi is a traditional Indian desi ice cream, which is popularly sold by Kulfi vendors in streets.
This Kesar pista Kulfi is the basic one for many other flavors. You can use this as base and prepare different flavors of kulfi.
Basically kulfi is prepared by following steps:
- Simmer sweetened milk until it reduces in volume. Sugar caramelizes and helps with taste, flavor and color.
- Freeze it quickly for a creamy and delicious frozen treats.
Last year itself I wanted to post kulfi recipe, as I got the recipe from my friend Sangeeta. But could not try or post.
So this summer, I was determined to try this out. I thought I should try this kesar pista kulfi first before trying the plain kulfi, coz I like kesar flavour.
This recipe is quite simple without condensed milk. It turns out rich and tasty.
Instructions
- In a heavy bottomed vessel, heat milk firstly. Bring it to boil and then add sugar.
2. Meanwhile take some 1 tablespoon milk from it and mix saffron in it. Add it to the boiling milk along with chopped pista.
3. Put the flame to low and simmer furthermore until the milk reduces to half.
Keep stirring every now and then in between.Cool down and pour to molds or tumblers or in a 'Kulhad'.
4. Cover with cling wrap and insert a skewer / ice cream stick in each mold. If you have poured in kulhad, you can serve as such without any sticks.
5. Freeze overnight and its ready to eat. To un-mold, show the molds under tap water or immerse in a warm bowl of water for a minute and finally, pull it out gently.
Serve with more nuts topped over the kulfi. You can also slice them to discs to serve.

Ingredients
- 3 cups Milk
- 6 to 8 strands Saffron
- 1.5 tablespoon Pistachios
- ¼ cup Sugar
Instructions

Soak saffron in warm milk and add it to the boiling milk. After that, add chopped pista too.
Put the flame to low and boil until the milk reduces to half.
Keep stirring every now and then in between.Cool down and pour to molds or tumblers.
Cover with cling wrap and insert a skewer / ice cream stick in each mould.
Freeze overnight and its ready to eat.
To unmold, show the molds under tap water for a minute and pull it out gently.
Notes
- I boiled 3 cups of milk to 1 & ½ cups of milk and used half cup of this reduced milk in each mold. So the number of kulfi you get depends on the size of your mold.
- If you want you can add a drop of green food color for a beautiful colored kulfi.
- Make sure you reduce minimum half the volume of milk by simmering. Otherwise kulfi wont be rich.

It looks yummy will try very soon but the problem is everytime i tried to make ice cream,it become more icy thn creamy...tastes like ice...no flavoura at all....wht to do....plz help

Hi I tried this. I put in freezer abt 12+ hours now. But it is not getting freezed. Not sure y. Can u suggest anything?

Do not open and check too often. Probably you live in hot place and let it be overnight in your freezer.
